Shio Koji Mushroom Soup

Ingredients (Serves 2)

About 1/2c. Shio Koij marinated mushrooms
2c. your choice of stock, such as chicken, bonito, etc.
Salt to taste
Shio Koij marinated mushrooms
13 oz. mixed mushrooms of your choice, such as Shiitake, Shimeji, King trumpet, or Enoki
3 Tbsp. Marukome Shio Koji
Directions:
Slice all mushrooms into bite-size pieces. Boil water and cook mushrooms in a pot, for a couple of minutes.
Drain and mix with Shio Koji while mushrooms are hot. Transfer to air-right container and keep refrigerator.
How to use:
Add to Uson or Soba noodles as a topping or mix with steamed vegetables.

Directions

  • 1. Add Shio koji marinated mushrooms and stock to a pot, and heat. Season with salt, if necessary. Serve hot.
